The Charles Brasserie & Bar is kicking off December with a sugar-dusted celebration, unveiling a Christmas makeover of its iconic dessert trolley. Sitting in the heart of Sydney’s CBD, the European-style brasserie is transforming its famed roving cart into a whimsical parade of festive creations, handcrafted daily by Etymon Group’s newly appointed Head of Pastry, Rhiann Mead.
The seasonal lineup marks a new chapter for Mead, fresh from her Dessert Masters spotlight and now overseeing pastry across the entire Etymon portfolio. Her Christmas collection blends luxury and playfulness, delivering the kind of table-side theatre The Charles is known for. And with select treats available for takeaway plus a special Christmas Day lunch featuring Rhiann’s Black Forest Bûche de Noël, it’s shaping up to be Sydney’s most indulgent way to celebrate the season.
