The team behind Surry Hills’ Mille Vini has opened Rovollo, an intimate, theatrical restaurant where every visit is a show.
Located at 25 Martin Place, Rovollo pairs personalised hospitality with a menu focused on Italian-inspired pasta dishes flambéed tableside in an imported Parmigiano-Reggiano wheel. The space balances elegant textures, a marble chef’s table, and an open kitchen.
Executive Chef Cami Feliciano leads a rotating menu of fresh pasta, alongside hearty proteins and antipasti. Head Chef Zane Buchanan drives the share-style protein dishes with premium seafood and bold flavours. The drinks list is equally impressive, with over 250 wines and curated pairings, many poured by the glass using Coravin tech.
