Applejack Operate Opera Bar

The Sydney Opera House has announced a major new partnership, appointing Applejack Hospitality to operate the world-famous Opera Bar and House Canteen for the next decade.

Known for their award-winning restaurants and bars, including RAFI, Bopp & Tone, Forrester’s, and The Taphouse, Applejack will bring a fresh vision to the venues while honouring their iconic status.

Following a highly competitive tender process, Applejack’s winning proposal promises to showcase Sydney’s cultural food scene at Opera Bar. The transition will take place ahead of the busy summer season, with Opera Bar changing hands in mid-September and House Canteen in mid-November, before planned refurbishments in 2026. Solotel, Matt Moran, and General Manager John Gallas will continue operating until then, marking the end of a remarkable 24-year tenure that shaped both venues into must-visit Sydney dining destinations.
